2 #'s ground beef
1 1/2-2 cups onion chopped(Taste Preference)
2-3 cloves garlic chopped(Again, Taste Preference)
3 tbsp oil
Salt and Pepper
2 jalapeno peppers or 1 aji chombo diced
1 tbsp chile powder
1/2 canArturo® sauce
1-3 egg whites
Pie Crust dough for 6 Pies.
Directions: Pre-heat your oven to 350 degrees. Heat oil in large pan and saute onion and garlic until it is translucent. Add the ground beef and stir continuosly so that it is not lumpy. After the ground beef is cooked, drain off most of the liquid. Add the diced peppers, chile powder, Arturo® Sauce, salt and pepper. Allow to cool completely.(Don't learn the hard way, if the mix does not cool completely it will "melt" the pastry)
While beef is cooling, prepare the pastry. Either follow your favorite recipe thru the point where you have rolled it out or purchase the ready made pie crust. For appetizer size empanadas use either a biscuit cutter or a coffee mug. For standard size empanadas use a bowl or the equivalent. On one half of the circle spoon on some of the meat mixture. Moisten the edges with water and seal with a fork. Brush the tops with the egg whites. Place on a non-stick cookie sheet. Bake for 20-25 minutes, or until golden brown.
Makes approx. 4 dozen appetizer size or approx. 2 dozen of the
standard size. What you don't eat pronto, freeze. Reheat in microwave on
85% power-approx. 1 minute for appetizer size, 2-3 minutes for standard
size.
